     α-Methylcinnamaldehyde has a characteristic cinnamon-like odor with a soft, spicy taste. It can be synthesized by the condensation of benzaldehyde and propionaldehyde in 1% caustic soda solution; it can also be synthesized by the controlled hydrogenation of α-methylcinnamaldehyde.
